Find out what’s in store for you in Issue No. 169

by | 17 Jul 2026

Each issue of La Passion des Couteaux is a moment of contemplation, discovery, reflection, sharing and transmission. Every two months, enjoy a new program!

A Summer of Cooking Around the World

Summer is the perfect season to travel, discover new horizons, and take the time to fully indulge your passions for knives and cooking. In this issue, we invite you to travel the world through cutlery and explore the connections that unite the craftsmanship of different countries. Japanese knives, now a staple in Western kitchens, are a perfect example of this: Japanese manufacturers adapt their designs to meet European expectations, while Western cutlers draw inspiration from their shapes, steels, and sharpening methods. This journey continues through the Czech Republic, Hungary, Switzerland, and Portugal, before stopping in Russia to discover a manufacturer renowned for the excellence of its work.

News and Discoveries

As in every issue, you’ll find the latest news from the cutlery world, a selection of great buying ideas, and a recap of the trade shows from late spring 2026. This time, @fandecouteaux’s “Favorites” spotlight the remarkable creations of Russian manufacturer Shirogorov, as well as the beautiful collaboration between CKF and Grind Tactical Knives. We also invite you to discover three brands whose stories are as fascinating as their creations: Japan’s Suncraft, Hungary’s NNKnives, and the French brand La Grande Coutellerie. Not to mention the first part of Gilles Cotten’s exceptional collection—a collection that’s one of a kind.

Events and Major Gatherings

In this issue, we introduce you to some exceptional cutlers, each renowned for their expertise: Anthony Brochier and his Damascus steel knives, Bryan Raquin and his Japanese kitchen knives, Ugo Mighali and his carved knives, and Richard Tesarik, whose creations captivate with their aesthetic appeal. We also look back at the fifth World Capital of Cutlery conference, held this year in Portugal, as well as the key moments that shaped the industry. Finally, as we do every year, check out the results of the contest organized by the NeoCzen forum.

Technology and Expertise

Craft enthusiasts can follow Paulo Simoës’ step-by-step instructions to make their own leather sheath. Our new column on cutlery revisits an event that has become a must-attend for enthusiasts. On the technical side, we continue our series on the mechanisms of folding knives. After covering two-pin mechanisms, ferrule designs, and various locking systems, we’re now turning our attention to palm knives. These topics all highlight the skills, knowledge, and craftsmanship that enrich the world of cutlery.
